Our coconut vinegar comes from the nectar (sap) of the coconut blossoms of coconut trees, it does not come from the water of the coconut, where many other coconut vinegars are made. The sap is harvested by tapping the tree just like maple syrup. The coconut tree produces a naturally sweet nutrient rich sap that has a low glycemic index (may vary from batch to batch but on average it is 35, which is one of the lowest among sweeteners), and contains 17 amino acids, high mineral content, vitamin C and a broad spectrum of B vitamins.

This coconut vinegar hasn’t been heated or heat process to ensure that it is enzymatically active. It is naturally fermented, which means that nothing has been added to alter the properties of the vinegar. It contains the “mother” and is fully alive by the time it reaches your belly! This means it will help with digestion and many other health-promoting factors associated with probiotics.

The sap of the coconut tree is known as the lifeblood of the tree, in which all the minerals are present to aid the tree in it’s growth and maturation. Sea water is absorbed by the roots of the coconut tree full of 65 abundant minerals, mixed in with the mineral rich water draining form the mountains of the Philippines. Nowhere else in the world do coconut trees have these kind of growing conditions. This is why coconut vinegar is said to be nutritionally superior to apple cider vinegar. It is high in potassium and full of alkalizing minerals. Even though it is chemically acidic, it has an alkalizing effect on our bodies when we ingest it.
